Whoopie Pie Recipe

 

 

 

 

I thought I would share a great, fun recipe with you. Who doesn’t love Whoopie Pies . My family loves these, they are a wonderful treat,  you can freeze them and pull some out when friends come over or just eat them frozen.

Yields: 3 dozen

Cook time: 8 minutes

Bake at 400 degrees on greased cookie sheet

Ingredients

1 cup butter

2 cups white sugar

2 eggs

2 tsp. vanilla

1 cup sour milk

2 tsp baking soda

1 cup hot water

4 cups flour

1 cup unsweetened cocoa powder

1 tsp salt

Butter-cream filling
1/1/2 cups of butter
4 cups powdered sugar
1/4 cup flour
1 1/2 tablespoon vanilla
2 egg whites beaten
Directions:
Grease cookie sheet.
In a large bowl cream together butter, sugar and eggs then add vanilla, sour milk. Mix in flour, cocoa, and salt  to cream mixture. Take baking soda and hot water and mix separately, when baking soda is dissolved add to batter.  Once mixed drop a tablespoon of batter on cookie sheet. Cook 8 minutes until firm but DO NOT OVERBAKE.
For the butter cream mix shortening, sugar, and flour beat until fluffy then fold in beaten egg whites that are firm. Finally add vanilla. Place one tablespoon of butter cream to fill  cookies. You may freeze these cookies up to six weeks in a zip lock bag.
